WINN ROBERTON

BOURBON STEAK WASHINGTON, DC

INSPIRATION:
When one thinks of Cannes and classic Hollywood, the words 'elegant' and 'intimate' should come to mind—so was the style of Tango music composed by Osvaldo Pugliese. Pugliese's music has been used for theatre, movies, and concert performances, but is best late at night as it has a more sensual tone to it. Despite his political dissents, Juan Perón awarded Pugliese the Order of May, Argentina's highest civilian award.

Pugliese

1 oz. Cointreau
¾ oz. Lairds Apple brandy
¾ oz. Lustau Papirusa sherry
¾ oz. Maurin Quina
1 oz. soda water

Garnish: Lemon zest

Combine all ingredients but soda water in mixing glass and stir. Strain into chilled coupe. Garnish with lemon zest and top with soda water.
