Capitol File invited DC’s most influential to celebrate La Dolce Vita in the Nation’s Capitol at Sfoglina. After Chef Fabio Trabocchi and his wife Maria closed Casa Luca, Sfoglina officially opened in its place. This homemade pasta house in the Van Ness neighborhood is quickly up and coming, famous for its homestyle Italian dishes and neighborhood feel. Beginning with a selection of nibbles to share, our influencers enjoyed aged prosciutto with melon and balsamic, grilled spicy calamari, an arugula and bibb salad, and an assortment of spanish anchovies, sicilian red peppers, pickled cucumbers, marinated olives and country bread. For the main entree, the downtown eatery served a selection of classic and seasonal pastas. The four options included a neapolitan maccheroni with pesto genovese, artichokes and a pine nut crumble, a spaghetti chitarra with pancetta and escarole carbonara style, a potato gnocchi with porcini crema, mushrooms and parmigiano reggiano, and a pappardelle with lamb ragu, confit eggplant and fossa. We finished with some decadent sweets from Nonna’s pastry cart, with options of cookies and milk, tiramisu panna cotta, zabaglione, and cocoa nib dentelle, or a lemon hazelnut coffee cake with vanilla chantilly and praline sauce.
