Old Fashioned Mushroom Soup
For this winter season, Sou’Wester’s Chef de Cuisine Rachael Harriman at the Mandarin Oriental suggests a recipe perfect for a holiday party.

Ingredients:
2 lbs Cut Mushrooms
2T Lemon Juice
2T Butter
4T Minced Shallots
2T Chopped Thyme
1 Bay Leaf
1 tsp Ground Black Pepper
4 cups Heavy Cream
1.5 cups Chicken Stock
1.5 cups Mushroom Stock

For the roux
1/2 cup flour
1/2 cup melted butter

Method
Sweat shallots in butter. Add chopped mushrooms, thyme, lemon juice and bay leaf. Cook until liquid from mushrooms has evaporated.

In another pot, mix chicken stock, mushroom stock and cream. Simmer for 20 minutes.

Cook the melted butter and flour together for five minutes just to cook out the flour taste. Take the cream and mushroom stock mixture and pour into the roux a little at a time and keep stirring to prevent lumps. After all the liquid is thickened with the roux, mix in the sweated mushroom mixture. Cook all together for 5-7 minutes.


Joshua Bell Performs This Week
Fresh from his White House performance last month, Joshua Bell—arguably the world’s greatest living violinist—performs at the Kennedy Center this week. He’ll be appearing in The French composer Edouardo Lalo’s Symphonie Espagnole, led by American conductor Hugh Wolff. The piece, for solo violin and orchestra, is a fresh, light piece based on Spanish folk songs. It’s a piece created for a violin virtuoso, with quick shifts between the highest and lowest registers, and the violin soaring above the symphony.

Bell’s new recording, his best-selling ever, demonstrates his enormous mainstream appeal. “At Home With Friends” features instrumental and vocal duets with musicians Chris Botti, Sting, Josh Groban, Kristin Chenoweth, Regina Spektor, Anoushka Shankar, Marvin Hamlisch and Tiempo Libre, among others.
