This October, Windows Catering executive pastry Chef Laurent Lhuillier, USA Pastry Champion shares with Capitol File the one of his delicious recipes!
Raspberry Tart
Sweet Dough Ingredients:
1 cup butter (soft)
a pinch of salt
1 ¼ cup confectioner sugar
2 eggs
3 ¾ cup all purpose flour
Almond Cream Ingredients:
1 cup soft butter
1 cup sugar
3 eggs
2 cups almond flour
1 oz all purpose flour
Sweet Dough: In a mixing bowl with a paddle attachment, mix butter, confectioner sugar and salt to a creamy consistency. Then, add eggs and finally add flour. Mix until well combined. Store in the fridge.
Almond Cream: In a mixing bowl, with a paddle attachment, mix butter and sugar to a creamy consistency. Add eggs gradually, continuing to mix. Finally add almond flour and all-purpose flour, until all smooth lumps.
When ready, roll out the dough to desired thickness (not thicker than ¼ inch) and shape into mold. Fill with Almond Cream and bake at 350 F until golden brown.
Let the cooked dough cool at room temperature. Layer with whipped cream and top with fruit of your choice

| For adults, being scared truly out of your gourd is a great way to get in the Halloween Spirit. And the best haunted house in the country just happens to be a short drive north, at Eastern State Penitentiary’s Terror Behind the Walls. By night, a cast of 150 performers turns the imposing stone prison in Philadelphia into a (deliciously gruesome) living hell. Think animatronic corpses, hands reaching out in the dark from behind iron bars, and—new this year—the infirmary, complete with psychotic nurses and a morgue. Our visit last week left us shaking, breathless, and totally psyched for Halloween. Make a weekend of it! We suggest staying at the Four Seasons, the Ritz Carlton, or Loews —all three are close to ESP. Visit DiNic’s at the Reading Terminal Market for hot roast pork sandwiches (locals wait hours in line to snag one before they run out). Take in “Shopping in Paris: French Fashion 1850–1925” or the Henri Matisse exhibit at the Philadelphia Museum of Art.
